Try 'mopping' when cooking on a gas BBQ

14/09/2010 If you're looking for a new way to cook perfect meat on your gas BBQ, then a technique known as mopping could be the answer.

Writing for NewsandTribune.com, Dave Lobeck of BBQ My Way, explained that the method helps to tenderise and flavour the meat.

The sauce, which should have the "consistency of water", should be applied four or five times during the cooking process using a utensil which resembles a miniature mop.

Mr Lobeck suggested that a simple rub for cooking pork could be two cups of apple cider vinegar, two cups of water and a quarter cup of the rub used on the meat.

"It is my opinion that you don't need to get fancy on the mop. The real flavour comes from the meat, the smokiness imparted by the wood charcoal and the rub," he added.

The Associated Press reported recently that Iron Chef Masaharu Morimoto recommends marinating meat in a sauce containing alcohol before cooking to give it an extra kick.  ADNFCR-3488-ID-800063937-ADNFCR
