Marinade meat in alcohol before cooking on gas BBQ

09/09/2010 Alcohol is often the ideal addition to a marinade for meat cooked on a gas BBQ, it has been suggested.

The Associated Press reports that Iron Chef Masaharu Morimoto believes a splash of liquor, such as rum, tequila, or even sake, in a marinade helps prepare meat for grilling.

One suggested recipe involves combining two cups of saikyo miso with half cups of sake, soy sauce and mirin. This should be used to marinade pork ribs overnight, then the meat should be wiped clean and seasoned with salt and pepper before cooking.

Elizabeth Karmel, executive chef of Hill Country Barbecue Market, told the news provider: "I cook a lot with booze. It makes everything taste better and really gives food a fabulous depth of flavour."

Making your own marinades and relishes is also a good way to make food cooked on a gas BBQ healthier.

Sarah Giles, editor at Easy Cook, explained recently that homemade sauces are likely to have fewer calories and less sugar than shop-bought versions.
