Fish tacos 'an alternative to burgers on a gas BBQ'

31/08/2010 Fish tacos cooked on a gas BBQ offer something a little different to the traditional burgers and sausages usually served.

Writing for NewsandTribune.com, Dave Lobeck, said that fish tacos are easy to cook and can be grilled on either a charcoal or a gas BBQ.

Mr Lobeck said that a mild white fish works best and this should be marinated or covered in dry rub, but he warned that a citrus-based rub could make the fish rubbery.

Before putting the fish on, the BBQ should be set at a high heat and the grate should be cleaned. It is also important to apply olive oil to the grate to prevent it from sticking.

"Once you place your thawed fish on the grill, don't fiddle around with it. This is where mistakes happen, and fish falls apart," Mr Loebeck explained, adding that it may stick at first but should release when it is ready to turn after two or three minutes.

To serve, he suggested slicing into strips and wrapping in a tortilla with coleslaw and chipotle sauce.
